On Sundays, We Prep!

OK, so I’m a day late.  It’s Sunday Funday on a Monday!!

Here’s what I prepped this week.  I never spend more than 1 hour prepping on a Sunday.  The secret is planning.  I plan out exactly what I want to prepare and have all of the ingredients ready to roll. You can do this too!  Just make a plan!

First, I made these No Bake Energy Bites.  


1 cup peanut butter

1 cup oats

1 cup protein powder

1/2 cup honey

Mix all ingredients in a bowl.  Roll in 1 inch-ish balls.  Place on wax paper on a cookie sheet.  Stick in the freezer for 15 minutes or so.  Refrigerate and enjoy!  You can also add chocolate chips, nuts, coconut, or anything else you want to these!

Then, I baked some awesome asparagus with mushrooms.  Yum!

For my main dish, I created some stuffed bell peppers.  Except I don’t like to eat bell peppers.  Which is a problem…. So I just eat the stuffing.  Delightfully tasty, but maybe I’m biased.

I pack everything up so it’s grab and go all week long.

And I even made the kiddos some breakfast!!

Planning makes this easy, and I don’t mind eating the same thing for lunch all week.  My dinners are planned, too.  I make things for dinner that every member of our family will enjoy (AKA, not diet food).  I have the extra wiggle room because I managed my food for breakfast and lunch well.  Eating this way, I never feel deprived.
