Meal Prep, you say?

On Sundays, We Prep!

Today I created a Taco Chicken recipe that I have to say is juicy and delicious.




This recipe is super easy to create!

Taco Chicken

1 package of chicken breast

1 packet of taco seasoning

Cut chicken into pieces (I use my kitchen shears) and place into a deep skillet.  Place the lid on the chicken and cook for about 10 minutes until all chicken looks cooked (no pink).  Add a packet of taco seasoning and cook for another 10 minutes.  All done!  Find a video tutorial of the recipe here.  This is Jen Heward and I get some of my meal prep ideas from her.


I also cooked this riced cauliflower I found at Wal-Mart.  I plan to use this in place of rice this week.


These peanut butter energy bites have been great, so I made another batch.  I eat one in the mornings (at like 6am) and it holds me over for a few hours until I can eat breakfast.  I posted the recipe here.


Finally, no good Superbowl comes without a great dip.  This is in no way healthy, but I made this Hot Bacon and Cheese Dip.
