Easy Gluten-Free Meal Prep in Minutes!

On Sundays, We Prep (Gluten-Free, of course)!

It’s meal prep day, and I had the fastest, easiest prep yet!

It is all Gluten-Free and super tasty!

I’m going to lay it all out for you and let you follow me through my meal prep.

 

Breakfast

So, my first meal of the day is always my pre and post workout meal.  I always have a serving of rice Chex and a 1 scoop protein shake for those meals (not shown).

I will have breakfast around 10am.  That will be 2 scrambled eggs with a serving of cheese and a protein blueberry muffin (also not shown).  I cook my eggs in the morning before I leave so they stay fresh.  The muffins are just a Martha White Gluten-Free blueberry muffin mix.  I add a half scoop of PEScience Vanilla Cupcake Protein and use Fairlife 2% milk for a little added protein.  If you have kids, the Fairlife milk is nutritionally amazing!

Lunch

For lunch, I have 3oz of boneless, skinless chicken breast.  I sliced each piece in half long ways.  Then I diced each piece.  This makes the chicken smaller so that it cooks easier and I don’t need a knife and fork to eat it at work.  I put all of the chicken pieces in a bowl and covered it with a chili lime seasoning that I wanted to try out.  I always cover a baking sheet with foil for easy clean-up.  I spread the chicken evenly across the baking sheet and baked it in the oven at 425 degrees for about 15 minutes.

To go with the chicken, I diced up some Yukon gold potatoes then added some FlavorGod Bacon Seasoning and a drizzle of olive oil.  I dumped the whole mixture into my air fryer and fried them for 10 minutes.  The air fryer is amazing.  I have french fried potatoes that are still good for you!

I also microwaved a Steamables bag of corn, cause micronutrients!  I always try to have a vegetable with my meal for fiber and micros!

 

Snack

My snack is a yogurt and cheese stick.  Each meal and snack has a protein, fat, and carbohydrate.  I like it balanced like that.

Dinner is always TBT.  I plan my menus ahead of time, but sometimes scramble the days based on what I feel like eating.
