So, I am still super sick. Cooking has become the lowest priority, somewhere near cleaning toilets or raking leaves on my “don’t really want to do” scale.
So I used ALL THE CROCKPOTS! Here are a couple of really fast, healthy crockpot recipes for you!
Crockpot Roast and gravy
1 beef roast (I used chuck, but I like sirloin tip, too)
1 packet onion soup (dry)
1 can cream of chicken
1 can cream of mushroom
Throw all ingredients in a crock pot. Doesn’t even matter if your meat is frozen. Just throw it in. But don’t miss, cause then your food will be on the floor.
Cook it on high for 4 hours or low for 8. Eat it over rice or mashed potatoes or make sloppy sandwiches. I made nachos with it today. Yum! You can also add carrots, potatoes, mushrooms…..
Crockpot Cream Cheese Chicken
1 package of chicken breast
1 can rotel tomatoes
1 block low-fat (cause fat-free everything is gross) cream cheese
Gently place into your cooking apparatus (throw it in the crockpot). Again, frozen is ok. Cook on high for 4 hours or low for 8. You can add corn to make it mexican-y. I like this on a tortilla rolled up. Or you can put it on a tortilla with low-fat cheese on top baked in the oven for a bit…great!
