How to Combat the Blues-With TACOS!

What do you do when you’re treading water?

Today isn’t my best day.  Nor has it been my best week.  I am struggling.  I feel like I’ve been rushing around all week, but getting nothing done. So, what do you do when you’re treading water?

Keep on treadin’ baby!

Really, no matter what you’re going through, the old theme holds true:  This too shall pass.

Keep working.  Keep moving forward.  Keep on keepin’ on.  You can do it, you can get through it!  Remember that things don’t always happen on your timetable and sometimes you need to slow down and look around in order to settle your heart.  Spend some quality time with your family.  Have a girls’ movie night.  Do something fun and reset your soul.   That being said, the best things happen when food is involved.

Here is a recipe that everyone will love!

Crunchy Taco Cups

1 lb package of ground meat

Taco seasoning

Flour tortillas

Shredded cheese

Low fat sour cream (not fat-free,  fat-free is not delicious)


Preheat oven to 375 degrees.  Place the ground meat in a skillet and cook until completely browned.  Drain your meat and add taco seasoning with 1/3 cup of water and let this simmer.   Spray a muffin tin with cooking spray.  Tear flour tortillas in small strips, overlapping them in the muffin tin to create a “cup” out of the tortilla.  Place the taco mixture in each cup, filling about 3/4 of the way full.  Add shredded cheese and a little salsa on top.  Bake for 5-10 minutes, until the edges of the tortilla start to brown.  Remove the taco cups from the oven and, using a butter knife, pry them from the muffin tin onto a plate.  Top each cup with a dollop of sour cream.  Enjoy!  Recipe adapted from
